Red Bean with Plantain and Gari Crisps
Ingredients
- 2 C Black eye beans, cooked
- 2 tbsp Olive oil
- 1 medium Onion
- 4 cloves Garlic
- 2-inch Ginger
- 3 medium Tomato
- 1 tbsp Rhodes Quality Tomato paste
- 1 tsp Cumin powder
- 1 tsp Hinds paprika
- 1 cube Veg seasoning (optional)
- 1 tbsp Soy sauce (optional)
- 1 Large Red pepper
- 1 C McCain Diced Carrots
- 1 C McCain Sweet Corn
- 1 ripe Plantain
- 2 C Veg oil
- 1 C Gari flour
- 150 g Micro greens
Instructions
- In a saucepan, bring two cups of water to a boil. Once boiling, add gari (fermented cassava flour) while stirring continuously to prevent lumps. Cook until the mixture is smooth and can be formed into a ball. Place a little oil on two sheets of parchment paper, sandwich the gari ball between them, roll it flat, and set it aside.
- In a separate saucepan, heat olive oil and sauté chopped onions overmedium heat for 3 minutes, being careful not to burn them. Next, add mincedgarlic and ginger, sauté for 1 minute, then add cumin and continue sautéing foranother minute before adding the diced carrots. Incorporate chopped tomatoesand tomato paste, cooking for a few more minutes until the tomatoes havesoftened. Season with soy sauce and a seasoning cube. Mix thoroughly beforeadding the beans.
- Combine beans and sweet corn with a cup ofwater, then let it simmer on low heat for 15 minutes.
- Slice ripe plantains into rounds while beanssimmer, then season with salt.
- Heat vegetable oil in a saucepan over medium heat. Once the oil is hot,shallow fry the plantains until they turn golden. You can take them out halfwaythrough. Smash them with a glass, then fry them again for a crisper texture.This step is optional.
- Once plantain is ready set aside for later.
- Bring back the flattened gari you prepared earlier and usea cookie cutter to shape some gari pieces. Fry them in the same oil used forthe plantain until they turn golden and crispy. Remove them from the oil andlet them cool on a rack. Check on the beans, mix well and taste seasoning and removefrom heat.
- Serving suggestion:Place red beans in a serving bowl, top with smashed plantains and crisped gari, garnish with micro greens, and then serve.
